Recipe of the Week: Salmon and Asparagus Bake

This recipe is a great beginner's recipe, super easy and delightfully tasteful!

What you will need:
2 pieces of fresh or frozen Salmon (I use the frozen Atlantic Salmon Fillets from Sam's Club and they are great!)
2 bunches of fresh asparagus, trimmed (break off at the stem end, it will naturally break about an inch up)
1/3 cup chopped onion (optional)
2 Tbsp. butter, divided
1 Tbsp. Flour
1/8 tsp. salt
dash of pepper
3/4 cup milk
1/3 cup shredded cheddar cheese
1/4 cup crushed saltines or club crackers
1/8 tsp. parsley flakesDirections:

Bring about 1 - 1 1/2 inches of water to a boil in large pot. Place steaming utensil in pot and add asparagus (so that the water is not touching them). Cover and steam for 4 minutes.

Place steamed asparagus in a 1-qt. baking dish coated with nonstick cooking spray. Top with fish; set aside.

In a small saucepan, saute onion in 1 Tbsp. butter until tender. Stir in flour, salt and pepper until blended. Gradually whisk in milk. Bring to a boil; boil and stir 1-2 minutes or until thickened. Remove from heat; stir in cheese until melted. Pour over fish.

Melt remaining butter; stir in crackers and parsley. Sprinkle over cheese sauce.

Bake, uncovered, at 350 degrees for 20-25 minutes or until crumbs are golden brown and fish flakes easily with a fork.

Serve immediately.
